Ingredients:
Oxtail, onion, scallion, garlic, tomatoes, scotch bonnet pepper, carrots, fresh thyme, allspice, one can butter beans, salt and pepper.
Season the oxtail with scallion, scotch bonnet pepper( I didn't use any), garlic, thyme, allspice, salt and pepper.
Steps:
1. Brown the oxtail and seasoning in a pan for about 10-15 minutes.
2. Add water, onion, tomato and carrots. Turn down the heat and simmer the pot until the oxtail has softened, stirring occasionally.
(I used pressure cooker)
3. Add butter beans before severing.
